Turkey Frying

We have been frying a turkey for Thanksgiving for the last 5 years and if you have never had one, you need too try one. They are so delicious, moist, and flavorful. You can (and I highly recommend) injecting it with your favorite marinade about 24 hours ahead of time and it really sets the flavor for the turkey.
A couple safety things:
- Before you put the turkey in the fryer, turn the flame down really low or even off to prevent flare ups. I have never had a problem with fire by doing this. I always keep a fire extinguisher near by though, just in case.
- Put the fryer on an area you don’t mind getting oil on, the fryer WILL splatter.
- Don’t get complaciant with saftey. I consider myself fairly experienced now, but today I got complaciant. When I removed the turkey I did not wear long sleeves. As I was draining the oil, the turkey slipped off the hook and back into the hot oil splashing back on me. My arm got burnt and a little bit on my face. Thank God it wasn’t worse, but I did learn my lesson. They say to use a face shield, and though I never have I now see the importance in it. JUST BE CAREFUL, and accidents can happen TO YOU.
As long as you take safety precautions, frying a turkey can be a rewarding experience. I think I might try frying a ham for Christmas.
